Chicken & apple salad recipe

  1. 4 pcs boneless chicken breasts
  2. 1 bag of mixed lettuce
  3. 2 red apples
  4. 1 avocado
  5. Cubed feta cheese
  6. 4 cloves garlic
  7. Balsamic red wine vinegar
  8. Soy sauce
  9. Honey
  10. Black pepper
  11. Salt
  12. Olive oil
  1. Peel and chop 4 garlic cloves and cook with olive oil on a grill pan. Season the chicken breasts in salt and pepper. Mix soy sauce and honey in a small bowl and rub on the chicken. Follow by adding them to cook on the grill pan. Make sure to turn them on both sides to brown evenly and to cook well inside.
  2. For the dressing, mix the balsamic vinegar and olive oil together and set aside.
  3. Wash the mixed lettuce and pat dry with a clean kitchen towel. Wash and slice the apples. Put the lettuce in a bowl followed by the cubed feta and the sliced apples. Mix in the dressing and plate the salad.
  4. Peel and chop the avocado and add directly to the plate. I prefer adding the avocado to the plate instead of the bowl since it blackens easily and I’d rather store the leftover salad without black avocado.
  5. Once the chicken is ready, remove from heat and slice it up.
  6. Serve scattered on top of the salad.
