Avocado Pasta



  • Spaghetti
  • 2 Avocado,ripe
  • handful Cherry tomatoes
  • 1/2 cup Basil leaves or spinach
  • 2 Garlic cloves
  • Lemon juice
  • Kosher salt
  • Black pepper
  • 1/3 cup Olive oil


In a large pot of boiling water,cook pasta according to package instructions and drain well.
To make the avocado sauce,in a blender add avocado,garlic cloves,basil leaves,lemon juice and season with salt and pepper.While the motor is running,add olive oil in a single stream until emulsified and set aside.
In a large bowl,combine pasta,avocado sauce and cherry tomatoes and serve immediately.
